The briar root, discovered by the French artisans in the last century, it comes from ERICA ARBOREA, a spontaneous bush that grows in all forests of the Mediterranean area, from Greece to Argelia including Italy, France, Spain and Morocco. This bush develops a ball-like root that has to reach the weight of 3 kgs before being worked then is cuted in blocks (plateaux and ebauchons).
